presents:

Sweet & Spicy Deviled Eggs...

*Bonus recipe on bottom of page...

need:

two dozen eggs

*your choice. i prefer Ralph's in SoCal.

1 tbsp dijon mustard

*your choice. i prefer Grey Poupon Country Dijon.

1/2 cup mayonnaise

*your choice. if i 'must', i prefer Best Foods.

1/2 cup miracle whip

*use ALL mayo if you don't like 'the Whip'.

1/4 cup avocado

*(for garnish) Hass are always the best.

1 tbsp relish juice

*your choice. i like Vlasic.

1/2 tsp hot sauce

*your choice. i love Frank's Red Hot.

sea salt

*any

grinder pepper

*any

paprika

*your choice. i prefer Trader Joe's Smoked Paprika.

prep:

hard boil the eggs whichever way works for you.

*everbody, and i mean EVERYBODY as their favorite way. 

bring to a rapid boil.

turn-off burner.

cover and let the eggs 'finish' for 10-12 minutes.

immediately flush the now hard boiled eggs with

cool running water to stop them from cooking. 

let eggs sit in the cool water for at least 20-30min.

*also. buy your eggs a week or two prior to hard boiling,

as it makes for an easier peel (seriously).

after the eggs have cooled, peel under running water.

slice the eggs (length wise) in half. 

spoon yolks into large mixing bowl,

mashing with a table fork.

no lumps. 

rinse egg whites,

and place on paper towels to dry. 

assemble:

mix following ingredients with crushed yolks:

*to taste.

mayo, miracle whip, mustard, relish juice, hot sauce,

salt & pepper.

*i'm not a huge mayonnaise fan/user, so i half & half w/the whip.

**for 'spicier' eggs, add a bit more hot sauce of choice. 

at this point,

i choose to refreidgerate the yolk mix and

the egg whites for a minimum of 60-90min,

to let the mix settle and the flavors unite.

after the flavors blend,

use a spoon, small baggie or a 'piping tool'

to extract the mix onto the whites.

add a 'shake or two' of paprika to each finished egg. 

and (if you desire) garnish each egg with

a condiment of choice.

sometimes,

i like a sliver of avocado on mine.

*garnish i've used:

crab, shrimp, lobster, sweet relish/pickles, pineapple juice/chunks, shredded cheese, parmesan cheese, etc.

**also, fresh crumbled bacon bits on top are wonderful...
